I was reading that you are in ALabama and grew some sugar cane (we too are in Alabama. I had no clue that we could grow it here I thought we had to go with something like Sorghum Saceharum. What a messy job, boiling down the syrup. Here in Ohio, during the month of march, the maple syrup starts to run and it is collected in buckets attached to a spout drilled into the tree. Most of the parks have a "pancake breakfast" where you can watch the sap being boiled down to syrup. Then it's a nice hot breakfast of sausage and pancakes with real maple syrup.
